Wolfberry Orange Friands

I cooked these friands recently for a meeting when I had to "bring a plate." They were a huge hit! Simple to make and so yummy.

By the way "friand" means "small moist cake made with ground almonds and egg whites, sometimes with fruit added." Wolfberries are a high antioxidant fruit used for this recipe. Who would have thought nutrition could taste so good!

1 ½ cup almond meal
1 cup organic wolfberries, soaked overnight
4-6 drops of Orange essential oil
160g butter
1/3 cup plain flour
1 cups icing sugar
5 egg whites

Melt butter. Add almond meal, sifted flour, and icing sugar.

Add whisked egg whites, and then fold in Wolfberries and Orange Essential Oil.

Line friand tins with paper and cook for approx 20 minutes at 180 degrees Celsius.
