Wolfberry Orange Friands

I cooked these friands recently for a meeting when I had to "bring a plate." They were a huge hit! Simple to make and so yummy.


By the way, "friand" means "small moist cake made with ground almonds and egg whites, sometimes with fruit added." Wolfberries are a high antioxidant fruit used for this recipe. Who would have thought nutrition could taste so good!

1 ½ cup almond meal
1 cup organic wolfberries, soaked overnight
4-6 drops of Orange essential oil (FSANZ (AU) FDA (USA) food compliant essential oil)
160g butter
1/3 cup plain flour
1 cups icing sugar
5 egg whites

Melt butter. Add almond meal, sifted flour, and icing sugar.

Add whisked egg whites, and then fold in Wolfberries and Orange Essential Oil.

Line friand tins with paper and cook for approx 20 minutes at 180 degrees Celsius.

The Best Friands with Essential Oils!!

Recently we had an Essential Oil Goddess morning tea and the friands were absolutely divine! They were so decadent, and the orange essential oil brought out the flavour beautifully.

This recipe is so simple and easy to make, yet so impressive :) It is also gluten free as the base is almond meal, so you can't go wrong!

Delicious and divine and definitely on the menu at our next morning tea. Thanks again, Janet :)
